What A GREAT Recipe:!


Toni's Vegetable Tagine

2 teaspoons vegetable oil
1 cup chopped onion
1 cup chopped celery
3 minced garlic cloves
1/2 cups diced baby carrots
1/4 cup fresh flat leaf parsley
3 cups canned plum tomatoes
12 ounces drained cooked chickpeas
1 bay leaf
11/2 teaspoon dried ground cumin
1/2 teaspoon black pepper
1 inch stick of cinnamon
salt to taste

1.Heat oil in saucepan
2.Add onion, celery, garlic and cook at medium heat until slightly tender
3 Add carrots, cumin, pepper, cinnamon stick, bay leaf and stir for one minute
4.Add tomatoes, chickpeas, parsley
5.Reduce heat to simmer, partially cover the pan, and cook 20 minutes or until the carrots are tender
6.Remove bay leaf and cinnamon stick
7.Serve (alone or over rice.or penne pasta)
